Its cuisine, rooted in corn and chili but enriched with seafood, meats, herbs, and a variety of ancestral techniques, is, above all, a true reflection of the state's multifaceted identity.

Typical Ingredients of Guerrero's Cuisine

One of the most distinctive features of Guerrero's cuisine is the deep-rooted use of corn, which goes far beyond being a national symbol: in Guerrero, various local varieties are used to nourish tamales, atoles, tortillas, pozoles, and snacks. Alongside corn, chiles—especially costeño, guajillo, pasilla, and serrano—add flavor, color, and, of course, the characteristic spiciness to many dishes and sauces. Beans are another staple, present as a side dish or the base for regional dishes.
